Stone Fruit Salad with Honey Whipped Cream

Generally sweets aren’t my thing. I’ll take cheese, olives or a variety of dips over a cupcake any day. But, when the sweet tooth craving does hit, this is one of my go to recipes.

Fruit salad can have a bad rap. Canned fruit swimming in mystery cream may pop into your mind. This is the opposite of that. Summery stonefruit, honey and lemon with fresh, homemade whipped cream is perfect on these balmy Georgia days. No need to buy canned whipped cream when this recipe is so easy! Three ingredients make for a perfect whipped cream, and you’ll impress everyone, including yourself. 🙂

Fruit Salad
1 1/2 cup diced peaches
1 1/2 cup diced nectarines
1 cup raspberries
1 cup blueberries
1 cup cherries
3 tablespoons honey
2 tablespoons lemon juice
1 teaspoon lemon zest

Honey Whipped Cream
1 cup heavy whipping cream
2 tablespoons honey
1 teaspoon vanilla extract

In a large mixing bowl, combine honey, lemon and lemon zest. Whisk ingredients together. Add all prepped fruit into mixture, and gently combine. Once fruit is coated, cover and refrigerate for one hour.

To make the whipped cream, put cold heavy whipping cream into a bowl/ container. Beat cream on low with mixer (I used an immersion blender), and increase to medium speed. Add honey and vanilla and continue beating cream until firm peaks are formed (If your whipped cream loses its fluff, you can re-beat it until firm peaks form again).

Spoon mixture into a bowl, and top with honey whipped cream.
