These pink drinks are summery, refreshing and perfect cocktail for the warm months ahead.
4 thick slices of watermelon
12 ounces light rum (we added a bit extra)
1/2 cup simple syrup (recipe below)
approximately 30 mint leaves
1 cup sugar
1 cup water
Bring to a boil, and voila!
Use a pestle and mortar to crush mint leaves (cocktail muddler works just fine also!). Cut the fruit out of the watermelon rinds and discard. Use a food processor, or blender to puree the watermelon until smooth. In a large pitcher, combine the puree, crushed mint, rum, lime juice and simple syrup.
Serve with ice, mint springs and a slice of watermelon!
