On Wednesdays, we drink pink- Watermelon Mojitos


Yesterday, my friend Brittany Sharp and I decided to forgo our ritual of Whiskey Wednesday (at a really great place OTP, called Graft) in order to make these watermelon mojitos.

These pink drinks are summery, refreshing and perfect cocktail for the warm months ahead.


4 thick slices of watermelon
3 limes
12 ounces light rum (we added a bit extra)
1/2 cup simple syrup (recipe below)
approximately 30 mint leaves

Simple Syrup:
1 cup sugar
1 cup water

Bring to a boil, and voila!


Use a pestle and mortar to crush mint leaves (cocktail muddler works just fine also!). Cut the fruit out of the watermelon rinds and discard. Use a food processor, or blender to puree the watermelon until smooth. In a large pitcher, combine the puree, crushed mint, rum, lime juice and simple syrup.

Serve with ice, mint springs and a slice of watermelon!

  1. you won’t regret it!!The one thing I souhld probably note is that the recipe calls for the juice of half a large watermelon which you do NOT need. It took a while to juice the thing and we only ended up using about 1/4 of the juices we got out of it!
