On our recent trip to Toronto, Canada, one of the most memorable food experiences we had was avocado toast. It’s super easy, eye catching and is a healthy snack/lunch option for a busy week. My hubs begged for these, and I made these last night. I see poached egg topped ones and breakfast options in my near future. You can use whatever veggie toppers you have in your crisper; the world is your oyster. Here’s my version.
1 clove garlic finely minced
1 tablespoon finely chopped cilantro
a handful of cherry tomatoes, chopped
three radishes thinly sliced
salt & pepper to taste
dash of crushed red pepper
3 tablespoons sliced Parmesan cheese
4 pieces crusty bread of your liking
Mash avocados in a medium bowl with a fork. Add cilantro, squeeze lime juice and stir in garlic. Season with salt and pepper. Spread mixture over toasted bread. Top with sliced veggies, parm and crushed red pepper. Enjoy! Yield 4 toasts.
