Start With Amy’s – Creamy Summer Veggie Soup with Pesto Tortellini

As Millennials, we’re always on the go. I know that I, for one end up grabbing something on the go one to two times throughout the week for lunch. Luckily, there’s always a healthy option with Amy’s! Amy’s Kitchen carries a wide variety of handmade vegetarian options in a ton of different cuisines.

I’m teaming up with Amy’s to share a #startwithAmy’s recipe that takes an Amy’s dish and pairs it with the best of summer’s produce from my local farmer’s market.

I headed over to The Freedom Farmer’s Market, and was inspired to create this yummy soup!

Creamy Summer Veggie Soup with Pesto Tortellini

Ingredients

3 tbs butter
3 tbs olive oil
1/4 cup all purpose flour
1 package Amy’s Pesto Tortellini
1 cup grated parmesean cheese
1 cup half and half
1 yellow onion, diced
4 stalks celery diced
4 medium carrots diced
1 red pepper diced
2 zucchini diced
1 tomato chopped
4 cloves garlic minced
1/4 cup parsley chopped
4 cups vegetable broth
1/2 cup white wine (I used Chenin Blanc)
2 bay leaves
1/4 cup basil
1/2 tsp thyme
1/2 tsp cumin
1 tsp sugar
1/2 tbs red pepper flakes (adjust accordingly)
1/2 tsp garlic salt
salt and pepper to taste

Combine butter and 1 tbs olive oil with diced onion, carrot and celery. This combo, mirepoix, is a classic French flavor combination that is traditionally used in a variety of soups. Cook 15 minutes over medium heat until vegetables are cooked through and starting to brown. Add in flour, and stir until combined. Cook three minutes. The mixture will be thick! Add in red bell pepper, zucchini, tomato, garlic, remaining olive oil and cook 3 minutes. Slowly stir in wine, vegetable broth, basil, parsley and all seasonings (salt and pepper to taste). Bring soup back up to a slow boil, and turn the heat down to low. Cook 15 minutes, and then add in Amy’s Pesto Tortellini (I added mine in frozen and it broke apart beautifully). Continue cooking 10 minutes, then stir in parmesan cheese and then half and half until hot. Serve immediately!
